Blackbilly 2011 Chardonnay
A delicious fruit style Chardonnay from the Adelaide Hills Region exhibiting rich flavor with citrus notes. Complexity has been added to the wine by partial (10%) barrel fermentation in new French oak puncheons. Subtle oak character is aptly matched to ripe fruit flavours.
Blackbilly 2011 Grenache Shiraz Mourvedre
This is the fifth vintage of this regional blend using the varieties Grenache (50%) – used for its fruit, Shiraz (47%) – used for its structure & colour and Mourvedre (3%) – for spiciness. These varieties have underpinned the region’s wines and many of the grapes come from prized old vines. After open fermentation, the individual wines are matured in a mixture of old larger format oak with a smaller portion of new French oak for complexity. Complex and with life, this wine will suit many full flavoured foods, particularly Mediterranean cuisine.
Blackbilly 2011 Sangiovese
First release vintage 2007. This is a rich, fresh, fruity wine with a savoury edge. The maturation in large French oak puncheons for 14 months provides a complex oak character in harmony with the fruitiness producing medium bodied in style, but with full flavour and beguiling complexity. Sealed with a screwcap to ensure freshness as the wine ages. This wine is suitable for medium term cellaring when the wine may develop a harmless crust. Ideally decant and allow the wine to breathe on opening.

Shiraz is Australia’s most famous variety and McLaren Vale’s signature wine. Old vineyards, a Mediterranean climate and classical winemaking, which includes the use of American oak hogsheads, ensures a wine of substance and style.
Blackbilly 2011 Tempranillo
This fourth release vintage Blackbilly Tempranillo has produced a rich, fresh, fruity wine with a savoury edge. The maturation in large oak for 12 months provides a complex oak character in harmony with fruitiness, producing a medium bodied wine. This wine has been treated with respect in our cellar it is suitable for medium term cellaring when the wine may develop a harmless crust. Ideally decant and allow the wine to breathe on opening.
Blackbilly 2012 Pinot Gris
This vintage of Blackbilly Pinot Gris is made in a crisp, dry style and is varietal but with texture. No oak is used in the wine and we have bottled it quickly and under a screw cap seal to maximise freshness. It is intended to be drunk as a young wine, served chilled with seafood or as an aperitif.
Blackbilly 2012 Sauvignon Blanc
This vintage of Blackbilly Sauvignon blanc sourced from premium vineyards in the cooler parts of the Adelaide zone with a small component of Semillon (14%) for some richness and complexity. Distinctive in varietal aromatics and flavours this is truly an exciting wine style typical of the variety.
Blackbilly NV Sparkling Pinot Noir Chardonnay
This vintage of Sparkling Blackbilly Pinot Chardonnay is from cool regions and is a blend of 65% Pinot noir and 35% Chardonnay. This wine shows all the attributes of this classic blend with freshness. Produced in a Brut de Brut style, this wine will suit many delicately flavoured foods and particularly as an aperitif. Blackbilly SB4 Sparkling Shiraz
This vintage of Sparkling Shiraz is blended from a range of Shiraz base wines, predominately 2010 and also using some older oak matured parcels. At the time of disgorgement, a little 1996 vintage port (2%) was added to add depth of flavour and complexity. The finished wine is dosage with residual sugar to provide balance to the tannins and acid that is part of the traditional style of Sparkling Shiraz.
